Entomophagy
Synopsis
In Laos, everything that moves gets eaten, apart from the bicycles! Water scorpions, giant bugs, spiders, maggots and cockroaches. Anything goes. Like 3,000 ethnic groups around the world who eat more than 1,400 different species, the Laotians eat insects. They are entomophagous. But how do those larvae and insects get to market lm of exotic dishes. We retrace the chain to meet these men and women who trade, hunt and collect insects. Some are collected in the forest, where everyone has his own technique. Some are raised in the farms that supply their local markets. “Would you like to taste my water bug?”
